For weeks, I’ve been craving chicken tenders. I don’t even eat them that often, but knowing that I couldn’t have them with my gluten allergy only made me want them more.
Then, last night, I stumbled across this recipe. And by stumbled, I mean that I googled “gluten free chicken tenders”, and I am not even embarrassed about it because these babies turned out to be amazing.
The only change that I made was to substitute low-fat finely shredded mozzarella for the parmesan cheese the recipe called for. I have always hated parmesan. Ketchup on the other hand, is another story (if you can’t tell by that huge mound of it hanging out next to the chicken). Don’t worry, I added more after I took this picture so you wouldn’t be too disturbed.
On to the exciting news…
Andy got a new job!!! It’s a full-time, big boy sales job with salary+commission and full benefits! I am so happy for him!!
We’re all pretty happy for him around here
As for the rest of the night, we’re lounging around, watching basketball and resting up before heading to my mom’s house for Easter celebrations tomorrow!
